Ingredients
  • 180 grams Butter
  • 5 Eggs
  • 50 grams Sugar
  • 150 grams Honey
  • 2 teaspoons Vanilla
  • 250 grams Almond meal
  • 100 grams Flour
  • 12 grams Baking powder
  • Lemon
  • 100 grams Almonds (Chopped)
Instructions
  1. Heat butter in a saucepan over medium-high heat for about 5 minutes until it turns a nutty brown colour. Take it off the heat and let it cool down to room temperature.

  2. Place eggs, sugar, vanilla and the honey in a mixer and whisk for 5 minutes or until pale and doubled in volume.

    Fold in almond meal, flour, baking powder, chopped almonds, lime zest and juice and a pinch of salt flakes. Pour in the butter (stir butter well before adding) and fold to combine. Pour into greased pan and smooth top.

    If you have a bit too much mix, you can make muffins from it (see gallery).
  3. Bake for 40 minutes at 160 °C ( 320 °F ). Let it rest a bit when baked.
